Ellen Byrne & Chris CarlsonTo give our chocolates and confections their exceptional flavor, we use the best chocolate from France, Belgium and Venezuela. The finest nuts are roasted just before each recipe is created. Fresh cream from local dairies, real fruits and fine liqueurs are used in our unique line of truffles and pure fruit jelly squares.

Everything we make is produced in small quantities to ensure freshness: each chocolate is hand-dipped, the marzipan is shaped and painted individually. This is artisanal production at its best; a method rooted in the traditions of the elegant chocolate houses of Europe and old-fashioned seaside candy shops alike.

In creating our candies, we rely on regional confectionery traditions from around the world: Truffles in the French tradition; Turkish Delight from Istanbul; Marzipan fruits in the Swiss style; and American Pecan Pralines, Caramel confections and roasted nuts in chocolate.
